  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 4 large eggs
  • 2 teaspoons vanilla bean paste (or the seeds of 1 vanilla bean)
  • 1 teaspoon pure vanilla extract
  • 1/2 cup sour cream for topping
  • 2 tablespoons powdered sugar for topping
  • 1/2 teaspoon vanilla extract for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Mix graham cracker crumbs, browned butter, and granulated sugar in a bowl. Press into a springform pan to create an even crust and bake for 10 minutes.
  2. In another bowl, beat softened cream cheese until smooth; gradually add sugar and mix until combined. Add eggs one at a time followed by sour cream, heavy cream, vanilla bean paste, and mix until smooth.
  3. Pour filling over the crust and bake for 60-70 minutes until set but slightly jiggly in the center. Cool in the oven with the door ajar for one hour.
  4. In a small bowl, mix together sour cream, powdered sugar, and vanilla extract until smooth. Spread this topping evenly over cooled cheesecake. Refrigerate for at least four hours before serving.
