  • 1/2 tsp baking soda
  • 1 tsp salt
  • 3/4 cup softened butter
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 Rodelle Madagascar vanilla bean (seeds only)
  • 1/2 tsp Rodelle vanilla paste
  • 1 cup milk
  • 1 lb butter (for frosting)
  • 1 pkg pistachio pudding (3.4 oz)
  • 56 cups powdered sugar
  • 46 Tbs milk (for frosting)
  • Chopped pistachios (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flour, baking powder, baking soda, and salt in a bowl; set aside.
  3. In another bowl, cream together softened butter and sugar until fluffy; add eggs one at a time.
  4. Incorporate vanilla bean seeds and paste into the mixture.
  5. Gradually alternate adding dry ingredients and milk until combined.
  6. Divide batter between two greased 9-inch cake pans; bake for 25–30 minutes or until golden brown.
  7. Let cakes cool on racks before frosting.
  8. To make frosting, beat butter until fluffy; mix in pistachio pudding and gradually add powdered sugar and milk for desired consistency.
  9. Assemble the cake layers with frosting in between; frost the top and sides.
  10. Decorate with piped frosting and chopped pistachios.
