- 2 1/4 cups all-purpose flour

- 1/2 tsp baking soda
- 1 tsp salt
- 3/4 cup softened butter
- 1 1/2 cups sugar
- 3 eggs
- 1 Rodelle Madagascar vanilla bean (seeds only)
- 1/2 tsp Rodelle vanilla paste
- 1 cup milk
- 1 lb butter (for frosting)
- 1 pkg pistachio pudding (3.4 oz)
- 5–6 cups powdered sugar
- 4–6 Tbs milk (for frosting)
- Chopped pistachios (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Mix flour, baking powder, baking soda, and salt in a bowl; set aside.
- In another bowl, cream together softened butter and sugar until fluffy; add eggs one at a time.
- Incorporate vanilla bean seeds and paste into the mixture.
- Gradually alternate adding dry ingredients and milk until combined.
- Divide batter between two greased 9-inch cake pans; bake for 25–30 minutes or until golden brown.
- Let cakes cool on racks before frosting.
- To make frosting, beat butter until fluffy; mix in pistachio pudding and gradually add powdered sugar and milk for desired consistency.
- Assemble the cake layers with frosting in between; frost the top and sides.
- Decorate with piped frosting and chopped pistachios.
