Ingredients
- 8 boneless, skinless chicken breasts
- 1/2 cup extra virgin olive oil
- 1/3 cup fresh-squeezed lemon juice
- 1 tsp. fresh lemon zest
- 1 tsp. Greek seasoning
- 1 tsp. poultry seasoning
- 1 tsp. dried oregano
- black pepper to taste
- fresh parsley for garnish
Instructions
- Trim visible fat from chicken breasts.
- Score the chicken with small crosswise slits.
- In a Ziploc bag, combine olive oil, lemon juice, lemon zest, Greek seasoning, poultry seasoning, oregano, and black pepper.
- Add chicken to the bag; seal and refrigerate for 6-8 hours (or overnight).
- Drain marinade and bring chicken to room temperature.
- Preheat grill to medium-high heat.
- Grill chicken for about 4 minutes per side until cooked through (internal temperature should reach 165F/75C).
- Let rest for 5 minutes before serving.
