- 1/4 cup all-purpose flour

- 1/2 cup cold water
- 1 egg
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 green onions, finely chopped
- 1/4 cup cilantro, chopped
- 1/4 cup fresh mint leaves, chopped (optional)
- 1–2 small red chilies, finely chopped (optional)
- Vegetable oil for frying
- 3 tablespoons fish sauce
- 1 tablespoon sugar
- 2 tablespoons lime juice, freshly squeezed
- 1/4 cup warm water
- 1 garlic clove, minced
- 1–2 small red chilies, finely chopped (optional)
- 1 tablespoon rice vinegar (optional for extra tang)
Instructions
- In a mixing bowl, combine the rice flour, all-purpose flour, baking powder, salt, and black pepper.
- In another bowl, whisk together the egg and cold water until well combined. Gradually add this mixture to the dry ingredients while stirring until smooth.
- Fold in the chopped shrimp, green onions, cilantro, mint leaves (if using), and chilies into the batter. Ensure everything is evenly mixed.
- In a frying pan or deep fryer, heat vegetable oil over medium heat until hot enough for frying (about 350°F or 175°C). Test by dropping a small amount of batter into the oil; it should sizzle immediately.
