Ingredients

  • 1 cup Dried Green Split Peas
  • 1 piece Chicken Bone
  • 1 large Onion, chopped
  • 1 cup Chopped Carrot
  • 1 cup Chopped Celery
  • 1 teaspoon Dried Thyme
  • 1 Bay Leaf
  • Salt and Pepper to taste

Instructions

  1. Rinse the dried split peas under cold water until clear.
  2. In a large pot over medium heat, sauté chopped onion in oil until translucent. Add carrots and celery; cook until softened.
  3. Stir in rinsed split peas, cover with water or broth by an inch, then add the chicken bone, thyme, bay leaf, salt, and pepper.
  4. Bring to a boil, then reduce heat to low. Partially cover and simmer for about 90 minutes until peas are soft.
  5. Remove the chicken bone and bay leaf. Optionally blend part of the soup for creaminess.
  6. Adjust seasoning before serving warm.
