Ingredients

  • 1/4 head of red or white cabbage
  • 1 carrot
  • 4 kale leaves
  • 1/2 shallot or 1/4 red onion
  • 1/4 pomegranate (seeds only)
  • Juice of 1/2 lemon
  • 1/2 tsp Dijon mustard
  • 1 tbsp pomegranate molasses
  • 4 tbsp olive oil
  • Salt to taste

Instructions

  1. Thinly slice the cabbage and shallot. Grate the carrot and chop the kale after removing the rib.
  2. In a large mixing bowl, combine sliced cabbage, grated carrot, chopped shallot, sliced kale, and pomegranate seeds.
  3. In a mason jar, mix lemon juice, pomegranate molasses, Dijon mustard, olive oil, and salt. Shake well to combine.
  4. Pour the dressing over the salad mixture and toss gently to coat evenly. Serve immediately or refrigerate for up to an hour to meld flavors.
