- 60ml fresh lemon juice (from 1–2 lemons)
- 120ml extra virgin olive oil
- 1 tsp Dijon mustard
- 1/2 tsp sea salt, or to taste
- 1/4 tsp black pepper, freshly cracked
- Optional: a pinch of red pepper flakes for a little heat
Instructions
- Cook the pasta in salted boiling water until al dente. Drain without rinsing.
- Toast pine nuts in a dry pan over medium-low heat for 2-3 minutes until golden.
- Whisk together olive oil, lemon juice, zest, minced garlic, Dijon mustard, salt, and pepper until emulsified.
- In a large bowl, combine warm pasta with three-quarters of the dressing; toss to coat.
- Add cherry tomatoes, toasted pine nuts, and most of the Parmesan; gently fold in arugula.
- Taste and adjust seasoning if necessary; serve topped with remaining Parmesan.
