  • 1 1/2 cups white sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose or whole wheat flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups shredded zucchini
  • For frosting: 6 tablespoons unsweetened cocoa powder
  • 1/4 cup butter
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix together oil, sugar, and vanilla until well blended.
  3. In another bowl, whisk flour, cocoa powder, baking soda, and salt. Gradually add this to the wet mixture and stir until combined.
  4. If needed, squeeze excess moisture from the shredded zucchini before folding it into the batter.
  5. Spread the batter evenly in the prepared pan and bake for 25 to 30 minutes until set.
  6. For frosting, melt cocoa powder and butter together; mix with powdered sugar, milk, and vanilla until smooth.
  7. Once cooled, frost the brownies before cutting into squares.
