  • 1 cup apple cider
  • 1 medium onion (sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper (to taste)
  • 2 large sweet potatoes (peeled and cubed)
  • 2 tablespoons butter (for mash)
  • ¼ cup heavy cream or milk

Instructions

  1. Marinate the beef: In a bowl, mix beef medallions with ½ cup of apple cider, garlic, thyme, salt, and pepper. Let it marinate for at least 15 minutes.
  2. Cook the sweet potatoes: Boil cubed sweet potatoes in salted water for about 15-20 minutes until tender. Drain and set aside.
  3. Sear the beef: Heat olive oil in a skillet over medium-high heat. Sear beef for about 3-4 minutes on each side until browned. Remove from skillet.
  4. Make the sauce: In the same skillet, sauté onions until softened. Add reserved marinade and remaining apple cider; bring to a simmer. Return beef to skillet and cover; cook for another 10-15 minutes.
  5. Prepare mashed sweet potatoes: Mix boiled sweet potatoes with butter, heavy cream or milk, salt, and cinnamon until smooth.
  6. Serve: Plate mashed sweet potatoes first, topped with apple cider beef and drizzled with sauce.
