  • 12 corn tortillas
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon oregano
  • 1/2 teaspoon hot smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried red pepper flakes
  • 1/4 cup tomato paste
  • 1/3 cup water
  • 1/2 cup neutral oil for frying

Instructions

  1. In a skillet over medium heat, brown the ground beef while stirring frequently. Add salt and pepper to season.
  2. Incorporate the chopped onion and red bell pepper; sauté until softened. Stir in minced garlic for the last 30 seconds.
  3. Mix in oregano, smoked paprika, cumin, and red pepper flakes. Add tomato paste and water; simmer covered for 10 minutes.
  4. Warm the tortillas either using a tortilla warmer or by wrapping them in a damp towel and microwaving.
  5. Fill each tortilla with about 3–4 tablespoons of the beef mixture; roll tightly and secure if needed.
  6. Fry in hot oil until golden brown on both sides (about three minutes per side). Drain on paper towels before serving.
