  • 12 jumbo shrimp (deveined)
  • 2 teaspoons Southwest spice blend
  • 1 tablespoon neutral oil
  • 4 tablespoons butter
  • 4 flour tortillas (10-inch)
  • 1 cup shredded Muenster cheese
  • ½ cup roasted green chile peppers (chopped)
  • 2 avocados (peeled and smashed)
  • ¼ teaspoon kosher salt

Instructions

  1. In a skillet over medium-high heat, warm the oil and cook the seasoned shrimp for about 4 minutes until done. Remove from heat.
  2. Butter one side of each tortilla generously.
  3. Spread smashed avocado evenly on the unbuttered side of each tortilla, then sprinkle with salt.
  4. Layer shredded cheese, cooked shrimp, and green chiles on half of each tortilla.
  5. Heat a non-stick skillet over medium heat, place one filled tortilla butter-side down, fold over once toasted (around 2 minutes per side).
  6. Repeat until all quesadillas are cooked. Cut into wedges and serve.
