Ingredients
- 10 ounces chilled cheese tortellini
- 12 ounces fresh broccoli florets
- 1/3 cup diced red onion
- 1/2 cup dried cranberries
- 5 slices of cooked turkey bacon (chopped)
- 1/3 cup chopped walnuts
- 1/3 cup mayonnaise
- 1/3 cup sour cream
- 1 tablespoon apple cider vinegar
- 1 tablespoon white sugar
- Salt and freshly cracked black pepper (to taste)
Instructions
- Cook the tortellini according to package instructions in a large pot of boiling water until tender. Drain and let cool.
- Blanch the broccoli florets in the same boiling water for 2-3 minutes until bright green, then transfer to ice water to halt cooking. Drain once cooled.
- In a mixing bowl, combine cooled tortellini, blanched broccoli, red onion, cranberries, turkey bacon bits, and walnuts.
