  • 10 ounces chilled cheese tortellini
  • 12 ounces fresh broccoli florets
  • 1/3 cup diced red onion
  • 1/2 cup dried cranberries
  • 5 slices of cooked turkey bacon (chopped)
  • 1/3 cup chopped walnuts
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon white sugar
  • Salt and freshly cracked black pepper (to taste)

Instructions

  1. Cook the tortellini according to package instructions in a large pot of boiling water until tender. Drain and let cool.
  2. Blanch the broccoli florets in the same boiling water for 2-3 minutes until bright green, then transfer to ice water to halt cooking. Drain once cooled.
  3. In a mixing bowl, combine cooled tortellini, blanched broccoli, red onion, cranberries, turkey bacon bits, and walnuts.
  4. For the dressing, whisk together mayonnaise, sour cream, apple cider vinegar (or balsamic), sugar, salt, and pepper until smooth.
  5. Pour the dressing over the salad mixture and toss until well-coated. Adjust seasoning if needed.
  6. Chill for at least one hour before serving.
