  • 2 medium boneless skinless chicken breasts
  • 1 sheet puff pastry (thawed if frozen)
  • 1 cup finely chopped mushrooms
  • 1 small shallot, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon unsalted butter
  • 2 tablespoons heavy cream
  • 1 tablespoon chopped fresh parsley
  • 1 egg yolk
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Sear in a hot skillet with oil for 2–3 minutes per side until golden. Set aside to cool.
  2. In the same skillet, melt butter and sauté shallots until translucent. Add garlic and mushrooms; cook until liquid evaporates.
  3. Stir in heavy cream and parsley; cook for an additional 2 minutes before removing from heat to cool.
  4. Roll out puff pastry on a floured surface. Spread half of the mushroom mixture in the center, place one chicken breast on top, and add remaining filling over the chicken.
  5. Fold pastry over, seal edges tightly, place seam-side down on a baking sheet, brush with egg yolk, and bake at 400°F (200°C) for 25–30 minutes until golden.
