  • 1 tbsp olive oil
  • 4 skinless, boneless chicken breasts
  • salt and pepper
  • 250g / 8oz button mushrooms (halved or sliced)
  • 2 shallots (chopped)
  • 3 cloves garlic (minced)
  • 2 sprigs rosemary (or 1 tsp dried rosemary)
  • 1 tbsp flour
  • 80ml / 1/4 cup dry white apple vinegar
  • 80ml / 1/4 cup chicken stock
  • 375ml / 1½ cups double/heavy cream
  • 1 tbsp dijon mustard (or wholegrain mustard)

Instructions

  1. Slice chicken breasts lengthwise and season with salt and pepper.
  2. Heat olive oil in a skillet over medium heat. Brown the chicken on both sides until golden; remove from skillet.
  3. In the same skillet, add mushrooms, chopped rosemary, salt, and pepper. Sauté for 2–3 minutes until browned.
  4. Add shallots and garlic; cook for an additional 1–2 minutes until fragrant. Stir in flour to combine.
  5. Pour in dry white apple vinegar while scraping the pan to release brown bits.
  6. Add chicken stock and cream; mix well. Stir in Dijon mustard.
  7. Return chicken to the pan with its juices; bring to a boil then reduce heat to low and simmer for about 10 minutes until cooked through.
