  • 1/2 Tbsp salt
  • 1/2 Tbsp paprika
  • 1/2 Tbsp brown sugar
  • 1/2 Tbsp pepper
  • 1/2 Tbsp onion powder
  • 1/2 Tbsp garlic powder
  • 1/4 Tbsp ground coriander
  • 2 lbs Angus ground beef (85/15)
  • 3 cloves garlic (minced)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 Tbsp heavy cream
  • 1/2 yellow onion (diced)
  • 1/2 cup ketchup
  • 1 1/2 Tbsp tomato paste
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar (packed)
  • 1 tsp ancho chile powder
  • Brioche or pretzel buns
  • Green leaf or arugula lettuce
  • 8 slices cooked turkey bacon

Instructions

  1. Prepare the Coffee Rub: In a bowl, combine ground coffee, salt, paprika, brown sugar, pepper, onion powder, garlic powder, and coriander.
  2. Make the Burger Mixture: In a mixing bowl, combine Angus ground beef with half of the coffee rub, minced garlic, kosher salt, black pepper, and heavy cream. Mix gently to avoid overworking the meat.
  3. Form Patties: Divide the mixture into six equal portions and shape each into a patty about ¾ inch thick.
  4. Cook the Burgers: Grill or skillet-cook patties over medium-high heat for about 5–7 minutes on each side until desired doneness is reached.
  5. Make the Sauce: In a saucepan over medium heat, sauté diced onions until translucent. Add ketchup, tomato paste, apple cider vinegar, brown sugar, ancho chile powder; simmer for 10 minutes.
  6. Assemble: Place cooked patties on buns and top with lettuce and sauce before serving.
