Ingredients
- 2 pounds mushrooms (wild)
- 4 sprigs fresh thyme
- 2 cloves garlic
- 1/4 cup fruit juice or broth
- 1/2 cup heavy cream
- 4 New York Strip Steaks
Instructions
- Prepare the steaks by allowing them to sit at room temperature for 30 minutes. Season generously with salt and pepper.
- Heat a sauté pan over medium-high heat and add olive oil. Sauté the mushrooms, stirring for about 10 minutes until golden brown.
- Stir in thyme leaves and chopped garlic, seasoning well with salt and pepper. Transfer cooked mushrooms to a platter.
- In the same pan off heat, add fruit juice or broth, returning to medium heat to simmer for 2 minutes before adding heavy cream. Cook until thickened, about 2-3 minutes.
- Return mushrooms to the pan and simmer for another 2 minutes until combined.
- Preheat grill to 500°F, sear steaks on both sides for about 2 minutes, then lower heat to finish cooking until desired doneness.
- Serve the warm mushroom sauce over steaks or as a side dish.
