  • 250 g granulated sugar
  • 90 g Dutch cocoa powder
  • 2 oz vegetable oil
  • 1 oz light corn syrup
  • 1 tablespoon pure vanilla extract
  • 1 large egg yolk
  • 1 large egg (room temperature)
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch
  • 60 g all-purpose flour
  • 2 oz chocolate (chips or chopped bars)
  • For the ganache: 12 oz good quality chocolate
  • 6 oz heavy whipping cream
  • 1 tablespoon butter
  • Rainbow candy-coated chips

Instructions

  1. Preheat your oven to 350°F (180°C) and line a 9×13 inch baking pan with foil, greasing it well.
  2. In a medium saucepan over medium heat, combine water, butter, sugar, corn syrup, and cocoa powder. Stir for about 2-3 minutes until smooth. Remove from heat and let cool for about 5 minutes.
  3. Mix in vegetable oil, vanilla extract, egg yolk, and whole egg until fully incorporated.
  4. Add baking soda, salt, and cornstarch; stir to combine. Gently fold in the flour and chocolate until just mixed.
  5. Pour batter into the prepared pan and bake for 14-18 minutes or until a toothpick comes out with moist crumbs.
  6. Allow brownies to cool completely on a wire rack before topping with ganache.
