Description

Ingredients

  • 1 lb Brussels sprouts, halved and trimmed
  • 2 tbsp olive or avocado oil (divided)
  • 1 tsp grated ginger
  • 2 tbsp BBQ sauce
  • 1 tbsp coconut aminos (or soy sauce)
  • 1/2 tbsp rice vinegar
  • Pinch of Korean-style red pepper (optional)
  • Salt to taste
  • Chopped cilantro and/or sesame seeds for topping (optional)

Instructions

  1. Preheat the air fryer to 380°F or the oven to 400°F.
  2. In a mixing bowl, toss the halved Brussels sprouts with 1 tablespoon of oil and salt until well coated.
  3. Cook in the air fryer for 6 minutes, toss, then continue cooking for another 5-7 minutes until crispy. If baking, arrange on a baking sheet and bake for 18-22 minutes, tossing halfway through.
  4. Meanwhile, whisk together BBQ sauce, coconut aminos, rice vinegar, and optional red pepper in a small bowl.
  5. Heat the remaining oil in a saucepan over medium heat. Add grated ginger and cook for one minute.
  6. Stir in the sauce mixture and let it thicken for about 4-5 minutes on low heat while whisking occasionally.
  7. Once the Brussels sprouts are done cooking, add them to the saucepan and mix well to coat. Return them to the air fryer or baking sheet briefly if you want extra caramelization.
  8. Serve immediately topped with cilantro and sesame seeds if desired.
