  • 1 box Strawberry Cake Mix
  • 1 cup Guava Nectar or Juice
  • 3 large Eggs
  • 1/2 cup Liquid Coconut Oil
  • 8 oz Cream Cheese
  • 1 cup Granulated Sugar
  • 8 oz Cool Whip
  • 1 tbsp Cornstarch
  • 1/2 cup Water
  • 1/2 cup Granulated Sugar (for topping)
  • 1/2 cup Coconut Flakes (Optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the Strawberry Cake Mix, Guava Nectar, and Eggs until well blended. Add Liquid Coconut Oil and mix again.
  3. Pour the batter into a greased 9×13 inch baking pan and bake for about 26 minutes or until a toothpick comes out clean.
  4. Allow the cake to cool while preparing the cream cheese layer by beating together Cream Cheese, Granulated Sugar, and Vanilla Extract until smooth. Fold in the Cool Whip.
  5. Once cooled, spread the cream cheese mixture over the cake and drizzle with cornstarch slurry if desired. Top with Coconut Flakes.
  6. Chill for at least an hour before slicing to serve.
