  • 1 pound Rack of Lamb (8-ribs, Frenched)
  • 2 tablespoons fresh Rosemary leaves
  • 2 tablespoons Fresh Thyme leaves
  • 1 tablespoon Olive oil
  • Salt and Pepper to taste
  • 1/4 cup shelled pistachios
  • 1/4 cup Panko bread crumbs
  • 2 tablespoons vegetable oil
  • 1 tablespoon unsalted butter (softened)
  • 2 tablespoons Dijon mustard

Instructions

  1. In a small bowl, mix rosemary, thyme, and olive oil.
  2. Pat the rack of lamb dry and season with salt and pepper. Coat with the herb mixture. Cover and refrigerate for 2 hours.
  3. Allow the lamb to reach room temperature for at least 30 minutes.
  4. Preheat oven to 400°F.
  5. Pulse pistachios in a food processor until coarsely chopped; combine with softened butter and Panko.
  6. Heat vegetable oil in a skillet over medium-high heat; sear each side of the lamb until browned.
  7. Generously coat the seared lamb with Dijon mustard, then press the pistachio mixture onto all sides.
  8. Roast in the oven until desired doneness is reached (use a meat thermometer).
  9. Let rest for about 10 minutes before slicing into chops.
