Instructions
- Prepare strawberries by tossing diced ones with granulated sugar and letting them sit for 10-15 minutes to release juices. Drain and coat with flour.
- Preheat oven to 350°F (175°C) and prepare a loaf pan with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, mix sugars, melted butter, oil, eggs, buttermilk, and vanilla until smooth.
- Combine wet and dry ingredients gently; then fold in floured strawberries.
- Pour batter into the prepared pan and bake for 55-65 minutes or until a skewer comes out clean.
- Cool in the pan for 15 minutes before transferring to a wire rack.
