  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 2 tablespoons light brown sugar, packed (optional, for extra moisture)
  • ¼ cup unsalted butter, melted
  • ¼ cup vegetable or canola oil
  • 2 large eggs, at room temperature
  • ¾ cup buttermilk, at room temperature
  • 1 ½ teaspoons vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 1 tablespoon milk (or plant-based alternative)

Instructions

  1. Prepare strawberries by tossing diced ones with granulated sugar and letting them sit for 10-15 minutes to release juices. Drain and coat with flour.
  2. Preheat oven to 350°F (175°C) and prepare a loaf pan with parchment paper.
  3. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another bowl, mix sugars, melted butter, oil, eggs, buttermilk, and vanilla until smooth.
  5. Combine wet and dry ingredients gently; then fold in floured strawberries.
  6. Pour batter into the prepared pan and bake for 55-65 minutes or until a skewer comes out clean.
  7. Cool in the pan for 15 minutes before transferring to a wire rack.
  8. Once cooled, whisk together powdered sugar, remaining ½ teaspoon vanilla extract, and milk until smooth. Drizzle over loaf.
