Ingredients
- 1 lb elbow macaroni
- 1 cup shredded carrots
- 1 cup chopped celery

- ½ cup sweet pickle relish
- 1 cup mayonnaise
- ¼ cup sour cream
- 2 tbsp Dijon mustard
- 2 tbsp apple cider vinegar

- ½ tsp onion powder
- Salt and freshly ground black pepper, to taste
Instructions
- Boil elbow macaroni according to package instructions until al dente. Drain and rinse under cold water.
- In a large bowl, mix together carrots, celery, red bell pepper, red onion, and sweet pickle relish.
- In a separate bowl, whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, sugar, paprika, garlic powder, onion powder, salt, and pepper until smooth.
- Combine the cooked pasta with the vegetable mixture and pour the dressing over everything. Toss until well-coated.
- Cover and refrigerate for at least one hour before serving.
