  • 1 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan with vegetable oil or line it with parchment paper.
  3. In a mixing bowl, whisk together vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
  4. In another bowl, mix together all-purpose flour, baking soda, baking powder, salt, and ground cinnamon.
  5. Gradually combine the dry mixture into the wet mixture using a rubber spatula. Fold in finely grated carrots and crushed pineapple; add chopped walnuts if desired.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for about 30 minutes until a toothpick inserted comes out clean.
  8. Allow cooling in the pan for 10 minutes before transferring to a wire rack to cool completely.
