Ingredients

Scale
  • 4 tablespoons unsalted butter, diced
  • 1/2 cup + 1 tablespoon granulated sugar
  • 1/4 cup + 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 3 tablespoons sugar
  • 2 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 3/4 cup whole milk
  • 1 egg yolk
  • 2 tablespoons fruit juice or broth (as a substitute for liqueur)
  • 1 tablespoon unsalted butter
  • 1/4 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Chocolate shavings

Instructions

  1. Preheat oven to 325°F (163°C). Line a 9 x 5-inch loaf pan with parchment paper.
  2. In a microwave-safe bowl, combine diced butter, granulated sugar, and cocoa powder. Microwave until melted, stirring in between.
  3. Stir in salt and vanilla extract; let cool slightly before adding the egg.
  4. Mix in flour until just combined; pour into prepared pan.
  5. Bake for about 23 minutes or until a toothpick comes out with fudgy crumbs. Cool completely.
  6. For pudding, whisk sugar, cornstarch, and salt in a saucepan. Gradually add milk while whisking continuously; stir in egg yolk.
  7. Cook over medium heat until thickened; remove from heat and mix in fruit juice and butter.
  8. Cut cooled brownies into cubes; layer them with pudding in serving cups.
  9. Refrigerate for at least four hours or overnight to set.
  10. Before serving, whip heavy cream with powdered sugar until soft peaks form; top each trifle with whipped cream and chocolate shavings.
