  • 1 lb shrimp (peeled and deveined)
  • 1 cup Fontina cheese (or Gruyère)
  • 1 cup Ricotta cheese (or cottage cheese)
  • 1 cup fresh Mozzarella cheese
  • 1/2 cup Parmesan cheese (or Pecorino)
  • 9 sheets lasagna noodles
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, boil water with a pinch of salt, add lasagna noodles, and cook until al dente. Drain and set aside.
  3. In a mixing bowl, combine Fontina, Ricotta, Mozzarella, Parmesan, lemon zest, and lemon juice until well mixed.
  4. In a baking dish, layer as follows: spread some cheese mixture on the bottom, add three noodles, half the shrimp, half the remaining cheese mixture; repeat with another three noodles and remaining shrimp and cheese.
  5. Finish with the last three noodles topped with leftover cheese. Cover with foil and bake for about 25 minutes; remove foil during the last 5 minutes for browning.
