Ingredients
- 1 lb shrimp (peeled and deveined)
- 1 cup Fontina cheese (or Gruyère)
- 1 cup Ricotta cheese (or cottage cheese)
- 1 cup fresh Mozzarella cheese
- 1/2 cup Parmesan cheese (or Pecorino)
- 9 sheets lasagna noodles
- 1 tbsp lemon zest
- 2 tbsp lemon juice
Instructions
- Preheat your oven to 375°F (190°C).
- In a large pot, boil water with a pinch of salt, add lasagna noodles, and cook until al dente. Drain and set aside.
- In a mixing bowl, combine Fontina, Ricotta, Mozzarella, Parmesan, lemon zest, and lemon juice until well mixed.
- In a baking dish, layer as follows: spread some cheese mixture on the bottom, add three noodles, half the shrimp, half the remaining cheese mixture; repeat with another three noodles and remaining shrimp and cheese.
- Finish with the last three noodles topped with leftover cheese. Cover with foil and bake for about 25 minutes; remove foil during the last 5 minutes for browning.
