  • 1/2 teaspoon coconut extract
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons coconut cream
  • 1 cup unsweetened shredded coconut
  • 2 cups heavy cream
  • 1/4 cup sugar-free sweetener
  • 1 teaspoon vanilla extract

Instructions

  1. 1. Prepare the crust by blending almond flour, coconut flour, xanthan gum, and salt in a food processor. Add chilled butter and cream cheese, pulsing until crumbly. Mix in egg and vinegar to form dough. Chill for 30 minutes.
  2. 2. Roll out the dough between parchment sheets to fit a pie plate. Bake at 350°F for 10-15 minutes until golden.
