  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 4 tablespoons unsalted butter
  • 1 3/4 cup almond flour
  • 1/2 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 12 tablespoons unsalted butter, softened
  • 1 cup erythritol
  • 1/2 cup golden monk fruit or Swerve
  • 1/2 teaspoon molasses extract
  • 1/2 cup buttermilk or plain yogurt
  • 5 tablespoons unsalted butter, softened
  • 1 1/4 cup powdered erythritol
  • 8 ounces cream cheese, softened
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon of reserved spice mixture

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare three six-inch cake pans by greasing them and lining the bottoms with parchment paper.
  2. Mix spices (cinnamon, cardamom, allspice, cloves, nutmeg, ginger) in a bowl; reserve some for frosting.
  3. Brown the butter in a skillet over medium heat; add spice mixture and cool slightly.
  4. In another bowl, whisk almond flour, coconut flour, baking powder, baking soda, and salt.
  5. Combine eggs and vanilla in a small bowl; set aside.
  6. In a large bowl, mix softened butter with erythritol and monk fruit until blended; then add brown butter mixture and egg mixture.
  7. Gradually mix in dry ingredients followed by buttermilk until smooth.
  8. Divide batter among prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Cool on wire racks before frosting.
  9. For frosting: beat softened cream cheese with butter, powdered erythritol, reserved spice mix, and vanilla until fluffy.
