  • 1 (1-pound) box bow-tie (farfalle) pasta
  • 1/3 cup apple cider vinegar
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 tablespoon dried basil
  • 1 clove garlic, minced
  • 1 medium red onion, finely diced
  • 1 (13.75-ounce) can quartered artichokes, drained
  • 1 pint grape tomatoes, halved
  • 1 cup shredded parmesan cheese

Instructions

  1. 1. Cook pasta in salted boiling water according to package instructions until al dente. Drain and shock in ice water.
  2. 2. In a skillet over medium heat, brown the diced chicken sausage until cooked through. Remove excess fat.
  3. 3. In a bowl, whisk together olive oil, apple cider vinegar, sugar, salt, dried basil, minced garlic, and diced red onion.
  4. 4. In a large mixing bowl, combine cooked pasta, chicken sausage, artichokes, grape tomatoes, and shredded parmesan. Pour the dressing over and toss gently to coat.
