  • 6 graham cracker sheets
  • 2 1/2 tablespoons unsalted butter
  • 1 tablespoon granulated sugar
  • 1 package (8 ounces) cream cheese, at room temperature
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon fresh lemon juice
  • Lemon curd for topping

Instructions

  1. Preheat the oven to 325°F. Line a 9×5 inch loaf pan with parchment paper.
  2. Crush graham crackers into fine crumbs. Mix with melted butter and sugar until combined. Press into the bottom of the prepared pan.
  3. Bake the crust for 20-22 minutes until lightly golden.
  4. Beat cream cheese and sugar until fluffy. Add egg yolk, vanilla, and lemon juice; mix until smooth.
  5. Pour cheesecake mixture over the crust and bake at 300°F for another 20-30 minutes until set.
  6. Cool in the oven, then refrigerate for at least four hours before serving topped with lemon curd.
