Ingredients
- 6 graham cracker sheets
- 2 1/2 tablespoons unsalted butter
- 1 tablespoon granulated sugar
- 1 package (8 ounces) cream cheese, at room temperature
- 1/4 cup granulated sugar
- 1 large egg yolk
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon fresh lemon juice
- Lemon curd for topping
Instructions
- Preheat the oven to 325°F. Line a 9×5 inch loaf pan with parchment paper.
- Crush graham crackers into fine crumbs. Mix with melted butter and sugar until combined. Press into the bottom of the prepared pan.
- Bake the crust for 20-22 minutes until lightly golden.
- Beat cream cheese and sugar until fluffy. Add egg yolk, vanilla, and lemon juice; mix until smooth.
- Pour cheesecake mixture over the crust and bake at 300°F for another 20-30 minutes until set.
- Cool in the oven, then refrigerate for at least four hours before serving topped with lemon curd.
