  • 1 large egg, at room temperature
  • 1 cup ricotta cheese, at room temperature
  • 1 teaspoon vanilla extract
  • Zest of 2 lemons
  • 2 teaspoons lemon juice
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups powdered sugar for glaze
  • 12 tablespoons lemon juice for glaze
  • Extra lemon zest for garnish

Instructions

  1. In a large bowl, beat together unsalted butter and granulated sugar until light and fluffy.
  2. Add egg, ricotta cheese, vanilla extract, lemon zest, and lemon juice; mix until well combined.
  3. Gradually add flour, baking powder, baking soda, and salt; mix until just combined.
  4. Chill the dough in the refrigerator for at least 2 hours or overnight.
  5. Preheat your oven to 350°F (175°C) and line a cookie sheet with a silicone mat.
  6. Use a cookie scoop to portion out dough onto the prepared cookie sheet, leaving space between each ball.
  7. Bake for 12-13 minutes or until lightly golden on the bottom; allow cooling on the baking sheet before transferring to a wire rack.
  8. For the glaze, whisk powdered sugar with lemon juice until drippy; dip cooled cookies in glaze and garnish with extra lemon zest.
