- 6 cups Sweet corn (fresh or frozen)
- 4 Tablespoons unsalted butter
- 1/2 cup mayonnaise
- 1 teaspoon finely grated lime zest
- 2 Tablespoons fresh lime juice
- 1 teaspoon finely grated lemon zest
- 1 Tablespoon fresh lemon juice
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon Dijon mustard
- 1 garlic clove (finely chopped)
- 1/8 teaspoon New Mexico Chile Powder (preferably Chimayo)
- 1 cup Mexican Crumbling Cheese (queso fresco) or cotija
- 1/4 cup chopped parsley
- 1/4 cup chopped cilantro
- Salt
- Pepper
Instructions
- Heat a large fry pan over medium-high heat.
- Add butter and let it melt until bubbles subside.
- Add sweet corn to the pan. Fry while stirring frequently until it's just starting to brown, about 10 minutes.
- In a small bowl, whisk together mayonnaise, lime zest, lime juice, lemon zest, lemon juice, olive oil, Dijon mustard, garlic, and chile powder.
- Season the mixture with salt according to your taste.
- In a large bowl, toss the browned corn with the prepared citrus aioli until well coated.
- Transfer to a serving platter or bowl.
- Add crumbled Mexican cheese, parsley, and cilantro on top.
- Season with additional salt and pepper if needed. Serve warm.
