Description

  • 18 ounces Flavored vegan gelatin (3 packages)
  • 6 cups boiling water
  • 4 tablespoons unflavored vegan gelatin
  • 3 cups whole milk
  • 1 stick Mexican cinnamon
  • 14 ounces sweetened condensed milk
  • 2 cups half-and-half
  • 1.5 teaspoons vanilla extract

Instructions

  1. Lightly coat three 8-inch square pans and one 9 x 13-inch baking pan with cooking spray.
  2. In separate bowls, mix each pack of flavored vegan gelatin with 2 cups of boiling water. Pour into greased square pans and refrigerate until set (2–3 hours).
  3. For the creamy layer, mix unflavored vegan gelatin with water in a saucepan; let bloom for 5 minutes. Heat gently while stirring until dissolved, then add whole milk and steep with the cinnamon stick for 30 minutes.
  4. Remove the cinnamon stick and whisk in sweetened condensed milk, half-and-half, and vanilla extract.
  5. Cut set flavored gelatins into cubes, mix in the prepared baking pan, and pour the creamy layer on top. Refrigerate at least 3 hours or overnight.
  6. Cut into cubes for serving.
