  • 1/2 medium red onion (finely chopped)
  • 1/4 cup fresh cilantro (finely chopped)
  • 1 jalapeño (seeded and finely diced)
  • 3/4 cup Greek yogurt (or mayonnaise)
  • 1/3 cup sour cream
  • 1 lime (juiced (3 Tablespoons), plus more to taste)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 clove garlic
  • 1/2 teaspoon kosher salt

Instructions

  1. Cook elbow macaroni in salted boiling water until al dente; drain and rinse under cold water.
  2. Grill corn until lightly charred; cool and cut kernels off the cob.
  3. In a small bowl or blender, combine Greek yogurt, sour cream, lime juice, chili powder, cumin, garlic, and salt; mix until smooth.
  4. In a large mixing bowl, combine cooled pasta with black beans, cherry tomatoes, green bell pepper, red onion, cilantro, jalapeño, and roasted corn.
