Ingredients

  • ½ tablespoon olive oil
  • 1 pound ground beef
  • 1 onion (chopped)
  • 1 stalk celery (chopped)
  • 1 tablespoon taco seasoning
  • 3 cups chicken broth
  • 1 cup salsa
  • 1 (12-oz) box small pasta shapes
  • 1 red pepper (chopped)
  • ½ cup sweet corn
  • Salt & pepper to taste
  • ½ cup shredded Mexican blend cheese

Instructions

  1. Heat olive oil in a large deep skillet or pot over medium heat. Sauté chopped onion and celery until softened.
  2. Increase heat to medium-high, add ground beef, and cook until browned. Stir in taco seasoning, then pour in chicken broth.
  3. Add salsa, pasta, red pepper, sweet corn, salt, and pepper into the skillet. Bring to a boil.
  4. Reduce heat to simmer; cover and cook for about 10-15 minutes until pasta is tender and sauce thickens. Stir occasionally.
  5. Once done, remove from heat and mix in cheese until melted. Serve immediately.
