- 1 pound ground beef
- 1 onion (chopped)
- 1 stalk celery (chopped)
- 1 tablespoon taco seasoning
- 3 cups chicken broth
- 1 cup salsa
- 1 (12-oz) box small pasta shapes
- 1 red pepper (chopped)
- ½ cup sweet corn
- Salt & pepper to taste
- ½ cup shredded Mexican blend cheese
Instructions
- Heat olive oil in a large deep skillet or pot over medium heat. Sauté chopped onion and celery until softened.
- Increase heat to medium-high, add ground beef, and cook until browned. Stir in taco seasoning, then pour in chicken broth.
- Add salsa, pasta, red pepper, sweet corn, salt, and pepper into the skillet. Bring to a boil.
- Reduce heat to simmer; cover and cook for about 10-15 minutes until pasta is tender and sauce thickens. Stir occasionally.
- Once done, remove from heat and mix in cheese until melted. Serve immediately.
