Ingredients
- 2 tablespoons extra virgin olive oil
- 1 pound ground chicken, beef, or turkey
- 1 yellow onion, chopped
- 1–2 jalapeños, seeded and chopped, use to your taste
- 2 cloves garlic, minced or grated
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon kosher salt
- 2 1/2 cups red enchilada sauce
- 1 cup dry long grain rice
- 1/2 cup fresh cilantro, chopped, plus more for serving
- Juice of 1 lime
- 2 cups tortilla chips
- 1–2 cups shredded Mexican cheese
- Sliced avocado and yogurt, for serving
Instructions
- Preheat the oven to 425°F.
- In a large oven-safe skillet, heat olive oil over high heat. Add ground chicken and chopped onion; cook until browned (about 5 minutes).
- Stir in chopped jalapeños, minced garlic, smoked paprika, cumin, and salt; cook for 1 minute.
- Pour in enchilada sauce and stir in 2 cups of water. Bring to a boil, then add rice. Cover and reduce heat; simmer for 15 minutes until most liquid is absorbed.
- Remove from heat and mix in cilantro and lime juice. Layer cheese on top of the mixture followed by tortilla chips and remaining cheese.
- Bake for about 10 minutes until cheese is melted. Serve hot with avocado slices and yogurt.
