  • 2 cups all-purpose flour
  • 1 tbsp cocoa powder
  • 1 large egg
  • ½ cup buttermilk
  • 1 cup light brown sugar
  • ½ tsp vanilla extract
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup powdered sugar
  • 1 cup vegan marshmallows fluff
  • ½ cup butter, softened
  • ½ tsp vanilla extract
  • Gel food colors (blue and red)

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Beat butter and light brown sugar until fluffy; add egg, vanilla extract, and buttermilk.
  3. Sift together flour, cocoa powder, baking powder, and salt; mix into wet ingredients until just combined.
  4. Divide batter into two bowls; color one red and the other blue using gel food coloring.
  5. Chill batters for 10 minutes; scoop onto a lined baking tray.
  6. Bake for 8-10 minutes until set; cool completely on wire rack.
  7. Whisk together filling ingredients in a bowl until smooth; pipe onto half of the cakes and sandwich with remaining cakes.
