- ½ cup buttermilk
- 1 cup light brown sugar

- ½ tsp baking powder
- ½ tsp salt
- 1 cup powdered sugar
- 1 cup vegan marshmallows fluff
- ½ cup butter, softened
- ½ tsp vanilla extract
- Gel food colors (blue and red)
Instructions
- Preheat the oven to 350°F (180°C).
- Beat butter and light brown sugar until fluffy; add egg, vanilla extract, and buttermilk.
- Sift together flour, cocoa powder, baking powder, and salt; mix into wet ingredients until just combined.
- Divide batter into two bowls; color one red and the other blue using gel food coloring.
- Chill batters for 10 minutes; scoop onto a lined baking tray.
- Bake for 8-10 minutes until set; cool completely on wire rack.
- Whisk together filling ingredients in a bowl until smooth; pipe onto half of the cakes and sandwich with remaining cakes.
