  • 1/2 medium onion (sliced or cut into bite-size pieces)
  • 3/4 cup pineapple juice (from the canned pineapple)
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar (or apple cider vinegar)
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic (minced)
  • 1 tablespoon cornstarch

Instructions

  1. In a mixing bowl, whisk together pineapple juice, honey, soy sauce, rice vinegar, grated ginger, minced garlic, and cornstarch to make the sauce.
  2. Chop the red bell pepper and slice the onion into bite-sized pieces.
  3. Cut chicken breasts into 1-inch pieces and toss with garlic powder, pepper, and cornstarch until evenly coated.
  4. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Cook half of the chicken until browned (about 4 minutes per side), then transfer to a plate. Repeat with remaining chicken.
  5. Add reserved pineapple chunks to the skillet; sauté for 1 minute before adding bell pepper and onion. Cook for an additional 3 minutes until tender-crisp.
