Instructions

  2. Combine garlic powder, salt, and pepper; rub generously over all sides of the meat.
  3. Preheat your pellet grill to 225°F.
  4. Place the seasoned prime rib bone-side down on the grill and cook for approximately 35 minutes per pound (about 3-4 hours), aiming for an internal temperature of 120°F for rare or up to 130°F for medium.
  5. Once done, let it rest for 20 minutes under foil while you increase the grill temperature to 400°F.
  6. Return the roast to the grill until it reaches your desired doneness—130°F for rare, 135°F for medium-rare, or 140°F for medium.
  7. Rest again for an additional 15 minutes before slicing.
