- 1 large egg
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil (for cooking)
- 2 cups baby spinach or mixed greens
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 1/4 cup red onion, chopped
- 1/2 cup feta cheese, crumbled
- 1 tbsp olive oil (for drizzling)
- 1/2 lemon, juiced
Instructions
- In a mixing bowl, combine ground turkey, minced garlic, chopped onion, parsley, dill, breadcrumbs, egg, salt, and pepper. Mix gently until well combined.
- Shape the mixture into evenly sized meatballs.
- Heat olive oil in a skillet over medium heat. Cook meatballs for 10–12 minutes, turning occasionally until browned.
- While meatballs cook, prepare fresh veggies: slice cucumber, halve cherry tomatoes, chop red onion, and crumble feta cheese.
- To assemble bowls: layer spinach at the bottom; top with warm meatballs and fresh vegetables. Drizzle with olive oil and lemon juice before serving.
