  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1/3 cup breadcrumbs
  • 1 large egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (for cooking)
  • 2 cups baby spinach or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/4 cup red onion, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 tbsp olive oil (for drizzling)
  • 1/2 lemon, juiced

Instructions

  1. In a mixing bowl, combine ground turkey, minced garlic, chopped onion, parsley, dill, breadcrumbs, egg, salt, and pepper. Mix gently until well combined.
  2. Shape the mixture into evenly sized meatballs.
  3. Heat olive oil in a skillet over medium heat. Cook meatballs for 10–12 minutes, turning occasionally until browned.
  4. While meatballs cook, prepare fresh veggies: slice cucumber, halve cherry tomatoes, chop red onion, and crumble feta cheese.
  5. To assemble bowls: layer spinach at the bottom; top with warm meatballs and fresh vegetables. Drizzle with olive oil and lemon juice before serving.
