  • 6 bone-in, skin-on chicken thighs
  • 1 1/2 teaspoons smoked paprika
  • Kosher salt and freshly ground black pepper to taste
  • 2 pounds baby red potatoes, halved
  • 2 shallots, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 3 cups broccoli florets
  • 2 tablespoons unsalted butter
  • 1/4 cup white apple vinegar
  • 1/4 cup chicken stock
  • 1/2 cup heavy cream
  • 1 1/2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Season chicken thighs with smoked paprika, salt, and pepper.
  2. Sear chicken in a large cast iron skillet until golden brown on both sides.
  3. Place halved potatoes in the slow cooker; stir in vinegar, stock, shallots, garlic, thyme, salt, and pepper.
  4. Layer seared chicken over the potato mixture.
  5. Cook on low for 5-6 hours; add broccoli during the last 30 minutes.
  6. For the sauce, whisk together heavy cream, lemon juice, and cornstarch; stir into the slow cooker and cook on high until thickened.
