- 1 1/3 c all-purpose flour
- 1/8 tsp salt
- 3 eggs
- 2 tbsp olive oil
- 8 tbsp granulated sugar
- 1 lemon (zested)
- 7 oz Ricotta cheese
- 1 tsp vanilla extract
- 1/4 tsp lemon juice
- 1 tbsp icing sugar (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, salt, olive oil, and sugar. Mix in one egg until smooth.
- In another bowl, beat two eggs with sugar until fluffy. Add lemon zest, Ricotta cheese, vanilla extract, and lemon juice; mix until smooth.
