  • ½ cup crumbled feta cheese
  • ¼ cup ricotta cheese
  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons scallions (chopped)
  • 2 garlic cloves (minced)
  • ½ teaspoon dried dill

Instructions

  1. Preheat the oven to 400°F.
  2. Pat chicken breasts dry and create a pocket by making a horizontal slit without cutting through.
  3. In a bowl, mix paprika, oregano, garlic powder, onion powder, salt, and pepper; season chicken on both sides.
  4. In another bowl, combine spinach, feta cheese, ricotta cheese, scallions, minced garlic, and dill for the filling. Stuff each chicken pocket and secure with toothpicks.
  5. Heat olive oil in a cast iron skillet over medium-high heat and sear stuffed chicken until golden brown (about 3–4 minutes per side).
  6. Transfer the skillet to the oven and bake uncovered for 15–18 minutes until cooked through.
