  • 8 ounces turkey slices, chopped
  • 20 ounces refrigerated cheese tortellini
  • ½ small red onion, diced
  • 2 cups spinach, chopped
  • 8 ounces tomatoes (grape or cherry), halved
  • Handful fresh basil, sliced thin
  • ¼ cup olive oil
  • 2 tablespoons red apple vinegar
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon sugar
  • ¼ teaspoon garlic powder
  • Salt & pepper to taste

Instructions

  1. Boil salted water in a large pot and cook the tortellini according to package directions. Drain and rinse with cool water.
  2. In a small bowl or jar, whisk together olive oil, vinegar, Italian seasoning, sugar, garlic powder, salt, and pepper.
  3. In a large mixing bowl, combine the cooled tortellini with chopped turkey, onion, spinach, tomatoes, and basil.
  4. Pour the dressing over the salad and toss gently until evenly coated. Serve immediately for optimal flavor.
