Ingredients
- 8 ounces turkey slices, chopped
- 20 ounces refrigerated cheese tortellini
- ½ small red onion, diced
- 2 cups spinach, chopped
- 8 ounces tomatoes (grape or cherry), halved
- Handful fresh basil, sliced thin
- ¼ cup olive oil
- 2 tablespoons red apple vinegar
- ½ teaspoon Italian seasoning
- ¼ teaspoon sugar
- ¼ teaspoon garlic powder
- Salt & pepper to taste
Instructions
- Boil salted water in a large pot and cook the tortellini according to package directions. Drain and rinse with cool water.
- In a small bowl or jar, whisk together olive oil, vinegar, Italian seasoning, sugar, garlic powder, salt, and pepper.
- In a large mixing bowl, combine the cooled tortellini with chopped turkey, onion, spinach, tomatoes, and basil.
