Ingredients
- 1 cup almond flour
- 1/2 cup rolled oats
- 1/2 cup unsweetened shredded coconut
- 3 tbsp maple syrup
- 2 tbsp coconut oil (room temperature)
- 1 cup finely diced fresh strawberries
- 454 g silken tofu (drained)
- 1/3 cup maple syrup
- 1/4 cup raw cacao powder
- 3 tbsp corn starch
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and line an 8 x 8 baking pan with parchment paper.
- In a mixing bowl, combine almond flour, rolled oats, shredded coconut, maple syrup, and coconut oil until crumbly.
- Press the crust mixture into the bottom of the prepared baking pan firmly.
- In a food processor, blend diced strawberries, silken tofu, maple syrup, raw cacao powder, corn starch, and vanilla until smooth.
- Pour the filling over the crust and spread evenly.
- Bake for about 32 minutes or until set. Allow to cool completely before slicing into bars.
