Ingredients

Scale
  • 5 to 10 pound beef shoulder or butt
  • ½ teaspoon kosher salt per pound
  • ¼ cup golden monk fruit
  • ¼ cup paprika
  • 2 tablespoons garlic powder
  • 2 tablespoons black pepper
  • 2 tablespoons ground ginger
  • 2 tablespoons onion powder
  • 2 teaspoons dried rosemary

Instructions

  1. The night before cooking, rinse the beef and pat it dry. Rub salt over the entire surface of the meat and refrigerate overnight.
  2. In a mixing bowl, combine golden monk fruit, paprika, garlic powder, black pepper, ground ginger, onion powder, and dried rosemary.
  3. When ready to cook, moisten your hands slightly and rub the spice mixture all over the beef until fully coated.
  4. Preheat your smoker, oven, or Traeger grill to 225°F. Place the seasoned beef inside and cook for 8 to 12 hours until it reaches an internal temperature of 195°F to 203°F for optimal shredding.
  5. After cooking, let the beef rest for a few minutes before shredding using claws or forks.
