Ingredients
- 2 medium sweet potatoes (peeled and diced)
- 1 can (15.5 oz) garbanzo beans
- 1/4 cup fresh squeezed lemon juice
- 1/4 cup tahini sauce

- 2 teaspoons ground cumin
- 1/2 teaspoon minced garlic
- Salt and pepper to taste
Instructions
- Microwave the sweet potatoes in a covered microwave-safe bowl for 10-12 minutes until soft.
- Drain and rinse the garbanzo beans in a colander.
- In a food processor, combine cooked sweet potatoes, garbanzo beans, lemon juice, tahini, olive oil, cumin, garlic, salt, and pepper. Blend until smooth; adjust consistency with water if needed.
