- 2 medium artichokes
- 1 cup water
- 12 cloves garlic
- 1 tablespoon coconut oil
- 1/4 cup teriyaki coconut aminos
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground garlic
- 1/2 tablespoon sriracha
- 1 tablespoon honey
- 8 ounces yogurt (2% or whole milk)
Instructions
- Trim the artichokes by removing the top inch and tough outer leaves. Leave about half an inch of stem.
- Stuff the garlic cloves into the artichoke leaves for extra flavor.
- Cook the artichokes in an Instant Pot with water for 20 minutes on high pressure, then let them naturally release for 10 minutes before quick releasing.
- Preheat your grill to 550°F (287°C).
- Once cooked, scoop out the fuzzy choke inside each artichoke half.
- Mix teriyaki coconut aminos and coconut oil; brush this mixture onto the cut sides of the artichokes.
- Grill for 3-5 minutes until you see crispy tips and grill marks.
- For dipping sauce, combine all remaining ingredients in a bowl.
- Serve warm, either drizzling sauce over each halved artichoke or on the side.
