  • 12 maraschino cherries
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder

  • 1 large egg
  • 1/2 cup buttermilk (or powdered buttermilk)
  • 1/3 cup sour cream (or plain Greek yogurt)
  • 3 tablespoons canola or vegetable oil
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F.
  2. Melt butter in a microwave-safe bowl and pour it into a greased springform pan. Sprinkle brown sugar evenly over the melted butter.
  3. Arrange pineapple slices in the pan, placing one in the center and staggering the rest around it. Add cherries in the centers of whole slices.
  4. In a large bowl, whisk together flour, granulated sugar, baking powder, and optional salt.
  5. In another bowl, combine buttermilk, sour cream, oil, and vanilla extract until mixed well.
  6. Fold the wet ingredients into the dry mixture gently until just combined; small lumps are okay.
