  • 1.5 cups boneless chicken (cut into chunks)
  • 1/2 cup pineapple juice
  • 2 tbsp brown sugar
  • 2 tbsp soy sauce (low sodium)
  • 1 medium onion (cut into pieces)
  • Red/green bell peppers (cut into pieces)
  • 3 tbsp sesame oil
  • 1 tsp rice vinegar
  • 1/4 tsp paprika
  • 1 tsp fresh ginger, minced
  • 1 tsp fresh garlic, minced
  • 1/2 tbsp cornstarch
  • 1/2 tsp black pepper powder
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 1/2 tbsp water

Instructions

  1. In a mixing bowl, combine all sauce ingredients: pineapple juice, brown sugar, soy sauce, ginger, garlic, cornstarch, water, black pepper, paprika, and rice vinegar. Set aside.
  2. Marinate the chicken with salt, garlic powder, black pepper, and cornstarch for about 10 minutes.
  3. Heat sesame oil in a skillet over medium-high heat. Cook marinated chicken until fully cooked (about 5-7 minutes). Remove from skillet.
  4. Stir-fry bell peppers and onion in the same skillet until tender-crisp (about 3-4 minutes).
  5. Add cooked chicken back to the skillet with vegetables and pour in the sauce. Simmer until thickened.
  6. Serve hot over rice or noodles, garnished with sesame seeds and spring onion greens.
