Ingredients

  • 2 tbsp extra-virgin olive oil
  • 1 large sweet onion, sliced 1/2 inch thick
  • 4 cloves garlic, finely chopped
  • 1 tsp sea salt or pink salt
  • 1/2 tsp freshly cracked black pepper
  • 2 cups whole shiitake mushrooms
  • 2 cups baby bella or cremini mushrooms, sliced
  • 4 cups organic chicken broth or vegetable broth, gluten-free
  • 2 cups loosely chopped kale leaves
  • 1/2 cup coconut milk or coconut cream

Instructions

  1. In a large pot, heat the olive oil over medium heat. Sauté the sliced onion until soft and caramelized (about 15 minutes), stirring frequently. Add the chopped garlic and cook for another minute.
  2. Add both types of mushrooms to the pot and cook for 10 minutes until tender.
  3. Pour in the chicken or vegetable broth, bring to a boil, then reduce heat and let simmer for 15 minutes.
  4. Stir in the chopped kale and allow it to wilt for about five minutes before adding the coconut milk for creaminess.
  5. Taste and adjust seasoning as needed before serving hot.
